Cucumber salad is a classic. This summery mix is the perfect healthy combo, especially when combing vinegar, sliced cucumbers, and celery powder.
In a bowl, combine:
2 cucumbers peeled and thinly sliced
1 bushel of radishes thinly sliced
1 can garbanzo beans (rinsed and drained)
1 tbsp maple syrup
1/2 cup plus an extra splash of white vinegar
1 cup diced cherry tomatoes
1 scoop KOYAH celery powder (or 1/2 cup of freshly diced celery)
1 scoop KOYAH lemon powder (of juice 1 fresh lemon)
dash of salt, pepper, and garlic powder to taste
Step 1. Peel and thinly slice the cucumbers
Step 2. Thinly slice the radishes
Step 3. Dice the cherry tomatoes
Step 4. Add the rest of the ingredients and stir
Step 5. Cover and place in the fridge for at least 1 hour. The longer this sits, the better.
